Tortellini Soup

Ingredients:

  • 1 lb. Italian sausage
  • 1 cup coarsely chopped onion 
  • 2 cloves garlic minced
  • 5 cups beef broth
  • 1/2 cup water
  • 2 cup chopped canned tomatoes 
  • 1 cup thinly sliced carrots 
  • 1/2 tsp. basil
  • 1/2 tsp. oregano 
  • 1 8-oz can tomato sauce
  • 1 1/2 cup sliced zucchini
  • 3 tbsp. chopped fresh parsley
  • 1 medium green pepper chopped
  • 1 8-oz bag tortellini 
  • Parmesan cheese
  • Mozzarella cheese (optional) 
Brown and drain sausage.  Saute onion and garlic until tender.  Add broth, water, and all other ingredients up to and including zucchini.  Bring to boil. Reduce heat.  Simmer uncovered for 30 minute.  Add everything else and simmer covered for 35 minutes.  Sprinkle with Parmesan cheese and mozzarella if desired.
